I can’t believe Thanksgiving came and went so quickly this year! It’s that one special day when we would loosen up our belts by a notch or two and sink our teeth into dishes that are typically eaten for the holiday. The food is undeniably mouthwatering, but it’s the company we share our special day with that makes the meal memorable. This year my in-laws and I did not have a conventional Thanksgiving celebration. Instead of the usual turkey, mashed potatoes, cranberry sauce, string beans, stuffing and pumpkin pie, we enjoyed a traditional nine course Chinese banquet on a Saturday evening. It was a feast indeed! We dined on roasted pig, deep fried pork chops slathered in XO sauce, deep fried spicy shrimp, melon soup, roasted chicken, stir fried baby bok choy with abalone in oyster sauce, steamed fish in soy sauce, stir fried lobster, and last but not least, scallop and egg fried rice with chopped asparagus. After dinner we headed over to my mother in-law’s house for dessert, which was a birthday cake to celebrate my nephew’s 10th birthday. We had a fun night that was filled with laughter, yummy food and great people! My kids and I would have loved a traditional Thanksgiving celebration this year, but when it came down to it, we were simply thankful to be with the people we loved dearly.
